An empty ground-floor unit that had to work as a barbecue restaurant: tables with built-in grills, extraction over each of them, new toilets and a shopfront visible from the street. Extraction is the service that decides the rest of the project and leaves no room for improvising halfway through.

The starting point
What we found
Full fit-out of a 110 m² unit for the Korean restaurant Busan, carried out in 3 months. The unit was stripped back to the shell, the dining room, service run and washrooms were replanned, and individual extraction was installed over every grill table. In a Korean restaurant that installation governs the ceiling, the routes and the contracted power, and it conditions everything else.
What we did
The work, step by step
- 01Stripped back to the shell, with whatever appeared above the suspended ceilings reviewed before the layout was fixed
- 02New layout of dining room, service run and toilets, with customer and staff routes kept apart
- 03Individual extraction over every grill table, left exposed and treated as part of the dining room design
- 04Air conditioning and ventilation sized together with the extraction rather than after it
- 05New toilets with half-height tiling and a continuous washbasin counter
- 06Dining room lighting and power on circuits separate from the kitchen
- 07Shopfront joinery and sign, with step-free access from the street
